BEEF SALAD
Start to finish: 20 minutes
Serves 4
400g/3 cups of leftover cooked beef steak, diced
½ cup chopped flat-leaf parsley
2 cups cooked corn kernels
½ cup diced shallots
Bibb, or similar, lettuce, whole leaves
1 large garlic clove, crushed
Dijon mustard
Fresh ground pepper
Salted butter
1 cup diced Emmental cheese
Olive oil
Heat a medium skillet and add 25g/1 tablespoon of salted butter to sauté 1 can of corn or 2 cups of fresh corn kernels, with 1 chopped garlic clove, shallots, and flat parsley. Season to taste with fresh ground pepper. Cook until the corn is tender and the shallots translucent. Set aside and let cool.
After cooling, mix the corn, beef, and cheese. Serve with mustard and olive oil vinaigrette.
For homemade vinaigrette, whisk a teaspoon of Dijon mustard with ¼ cup of olive oil. Toss with beef, cheese, and corn.
Prepare a dish with lettuce and arrange the beef composition in the center of each leaf.
This beef salad reminds me of my auntâs story of her uncles coming to her home in the 1950s near the end of dinner one day, when she was a newlywed, to find her poised to scrape the gravy from the meat frying pan into the waste bin. They startled her with the cry, âDonât throw away that gravy.â
She stopped, and they handily finished the gravy off with some bread. From whence meals come; we always have enough.
